Ingredients

  • 4 tablespoons Tamarind paste (unsweetened)
  • 1 cup Water
  • 2 tablespoons Granulated erythritol (or preferred keto-friendly sweetener)
  • 1 tablespoon Soy sauce (or coconut aminos for gluten-free version)
  • 1 teaspoon Apple cider vinegar
  • 0.5 teaspoon Garlic powder
  • 0.25 teaspoon Ground ginger
  • 0.25 teaspoon Red pepper flakes (optional, for heat)
  • 0.25 teaspoon Xanthan gum (for thickening)

Directions

Step 1

In a small saucepan, combine the tamarind paste and water. Whisk until the paste dissolves completely.

Step 2

Place the saucepan over medium heat and bring the mixture to a gentle simmer.

Step 3

Add the erythritol, soy sauce (or coconut aminos), apple cider vinegar, garlic powder, ground ginger, and red pepper flakes (if using). Stir well to combine.

Step 4

Let the mixture simmer for 5-7 minutes, stirring occasionally, until all the flavors meld together and the sauce slightly reduces.

Step 5

Sprinkle the xanthan gum into the sauce while whisking continuously to avoid clumping. Let it thicken for another 1-2 minutes on the heat.

Step 6

Remove the saucepan from heat and taste the sauce. Adjust seasoning or sweetness if needed.

Step 7

Allow the sauce to cool slightly before transferring it to a jar or serving container.

Step 8

Store in an airtight container in the refrigerator for up to 2 weeks. Stir well before each use.
