Ingredients

  • 1 pound Ground beef (80/20)
  • 2 tablespoons Olive oil
  • 0.5 cup Onion, diced
  • 2 cloves Garlic, minced
  • 1 can (14.5 ounces) Diced tomatoes (no sugar added)
  • 2 tablespoons Tomato paste
  • 1 teaspoon Chili powder
  • 1 teaspoon Ground cumin
  • 0.5 teaspoon Smoked paprika
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 cup Shredded cheddar cheese
  • 1.5 cups Almond flour
  • 1 teaspoon Baking powder
  • 2 large Eggs
  • 0.5 cup Heavy cream
  • 2 tablespoons Butter, melted
  • 0.25 cup Chopped green onions (for garnish, optional)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until softened, about 3-4 minutes.

Step 3

Add the ground beef to the skillet. Cook until browned, breaking it up with a wooden spoon as it cooks, about 5-7 minutes. Drain any excess grease if necessary.

Step 4

Stir in the diced tomatoes, tomato paste, chili powder, ground cumin, smoked paprika, salt, and black pepper. Simmer for 5 minutes to allow the flavors to meld. Remove from heat and transfer the beef mixture to a greased 9-inch pie dish.

Step 5

In a large mixing bowl, whisk together the almond flour and baking powder. In a separate bowl, beat the eggs, then stir in the heavy cream and melted butter. Gradually combine the wet ingredients with the almond flour mixture until a smooth batter forms.

Step 6

Spread the almond flour batter evenly over the beef mixture in the pie dish, ensuring it covers the filling completely.

Step 7

Sprinkle the shredded cheddar cheese on top of the almond flour crust.

Step 8

Bake in the preheated oven for 20-25 minutes, or until the crust is golden brown and the cheese is bubbly.

Step 9

Remove the tamale pie from the oven and let cool for 5 minutes. Garnish with chopped green onions, if desired, before serving.

Step 10

Slice into portions and enjoy a delicious, keto-friendly meal!
