Ingredients

  • 2 cups Cauliflower rice (fresh or frozen)
  • 1 cup Fresh parsley (finely chopped)
  • 0.25 cup Fresh mint (finely chopped)
  • 1 cup Cherry tomatoes (diced)
  • 1 medium-sized Cucumber (seeded and finely diced)
  • 2 stalks Green onions (thinly sliced)
  • 3 tablespoons Lemon juice (freshly squeezed)
  • 3 tablespoons Extra virgin olive oil
  • 1 clove Garlic (minced)
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper

Directions

Step 1

If using fresh cauliflower, cut it into florets and pulse in a food processor until it resembles rice. If using frozen cauliflower rice, thaw and drain any excess liquid.

Step 2

Heat a non-stick skillet over medium heat and lightly sauté the cauliflower rice for 3-5 minutes until just tender. Allow it to cool completely.

Step 3

In a large mixing bowl, combine the cooled cauliflower rice, parsley, mint, cherry tomatoes, cucumber, and green onions.
