Ingredients

  • 4 cups Baby spinach
  • 1 cup Grilled chicken breast, cubed
  • 1 cup Cauliflower rice, cooked
  • 1 medium Avocado, diced
  • 1 cup Roasted Brussels sprouts, halved
  • 2 tablespoons Toasted pecans, chopped
  • 2 tablespoons Crumbled goat cheese (optional)
  • 3 tablespoons Extra virgin olive oil
  • 1 tablespoon Balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove Garlic, minced
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Preheat the oven to 400°F (200°C).

Step 2

Toss Brussels sprouts with 1 tablespoon of olive oil and a pinch of salt and pepper. Roast them on a baking sheet for 15-20 minutes or until tender and slightly caramelized. Set aside.
