Ingredients

  • 1 cup Mashed sweet potato (steamed or roasted, skin removed)
  • 1 cup Almond flour
  • 0.5 cup Cocoa powder (unsweetened)
  • 0.5 cup Granulated erythritol or monk fruit sweetener
  • 2 large Eggs
  • 0.25 cup Coconut oil (melted)
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 0.5 cup Sugar-free dark chocolate chips

Directions

Step 1

Preheat your oven to 350°F (175°C) and prepare an 8x8-inch baking pan by lining it with parchment paper or lightly greasing it with coconut oil.

Step 2

In a medium-sized mixing bowl, combine the mashed sweet potato, eggs, melted coconut oil, and vanilla extract. Mix until smooth and well combined.

Step 3

In a separate bowl, sift together the almond flour, cocoa powder, granulated erythritol, baking powder, and salt.

Step 4

Gradually add the dry ingredients into the wet ingredients and stir until a thick and uniform batter forms. Ensure there are no lumps.

Step 5

Gently fold in the sugar-free dark chocolate chips, reserving a few to sprinkle on top of the batter.

Step 6

Pour the batter into the prepared baking pan and spread it evenly with a spatula. Sprinkle the reserved chocolate chips on top.

Step 7

Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs (do not overbake).

Step 8

Remove the brownies from the oven and allow them to cool completely in the pan before slicing into 9 squares.

Step 9

Serve and enjoy your keto-friendly sweet potato brownies!
