Ingredients

  • 1 pound Ground beef (80/20 blend or leaner)
  • 1 medium Zucchini, diced
  • 1 medium Red bell pepper, diced
  • 14.5 ounces Canned diced tomatoes (no sugar added)
  • 2 cups Cauliflower rice (fresh or frozen)
  • 2 tablespoons Olive oil
  • 2 cloves Garlic, minced
  • 1 tablespoon Chili powder
  • 1 teaspoon Paprika
  • 1 teaspoon Ground cumin
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Erythritol or other keto-friendly sweetener
  • 0.25 teaspoon Red pepper flakes (optional, for extra heat)
  • 1 cup Chicken or beef broth (low-sodium)

Directions

Step 1

Heat olive oil in a large skillet or pot over medium heat.

Step 2

Add the minced garlic and sauté for 1-2 minutes until fragrant.

Step 3

Add the ground beef to the skillet and cook, breaking it apart with a spatula, until browned and fully cooked through. Drain excess fat if necessary.

Step 4

Stir in the diced zucchini and red bell pepper, cooking for 3-4 minutes until slightly softened.

Step 5

Add chili powder, paprika, ground cumin, salt, black pepper, and optional red pepper flakes to the skillet. Stir well to coat the meat and veggies evenly with the spices.

Step 6

Pour in the canned diced tomatoes, chicken or beef broth, and erythritol. Stir until everything is combined.

Step 7

Bring the mixture to a gentle simmer and reduce the heat to low. Cover and cook for 15 minutes to allow the flavors to meld together.

Step 8

Stir in the cauliflower rice in the last 5 minutes of cooking. Cover and let it steam until tender.

Step 9

Taste and adjust seasoning as needed.

Step 10

Serve hot and enjoy your Keto Sweet Chili as a hearty, satisfying meal!
