Ingredients

  • 2 whole Japanese cucumbers (or Persian cucumbers)
  • 0.5 teaspoons Salt
  • 3 tablespoons Rice vinegar (unseasoned, sugar-free)
  • 1.5 teaspoons Granulated erythritol (or other keto-friendly sweetener)
  • 1 teaspoons Soy sauce (or tamari for gluten-free)
  • 1 teaspoons Sesame seeds (toasted)
  • 1 tablespoons Optional: Wakame seaweed (dried, rehydrated)

Directions

Step 1

Wash the cucumbers thoroughly and slice them into very thin rounds (about 1/8 inch thick) using a sharp knife or mandoline.

Step 2

Place the cucumber slices in a colander and sprinkle them with the salt. Toss gently to coat, then let them sit for 10 minutes. This will help draw out excess water.

Step 3

While the cucumbers are resting, prepare the dressing. In a small bowl, whisk together the rice vinegar, granulated erythritol, and soy sauce until the sweetener is fully dissolved.

Step 4

If using wakame seaweed, rehydrate it by soaking the dried wakame in water for about 5 minutes or until soft. Drain and gently squeeze out any excess water.

Step 5

After 10 minutes, rinse the cucumbers under cold water to remove the excess salt, then pat them dry with a clean kitchen towel or paper towels.

Step 6

In a medium mixing bowl, combine the cucumber slices and rehydrated wakame (if using). Pour the dressing over the mixture and toss to coat evenly.

Step 7

Transfer the salad to a serving bowl and sprinkle with toasted sesame seeds.

Step 8

Serve immediately for the freshest taste or let it chill in the refrigerator for 30 minutes to enhance the flavors. Enjoy!
