  • 4 lbs Bone-in leg of lamb
  • 4 cloves Garlic cloves, minced

  • 2 tbsp Fresh thyme, chopped
  • 3 tbsp Olive oil
  • 2 tbsp Lemon juice, freshly squeezed
  • 1.5 tsp Salt
  • 1 tsp Black pepper, freshly ground
  • 1 cup Beef or chicken stock (keto-friendly, low-carb)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Remove the leg of lamb from the fridge and let it come to room temperature for about 30 minutes. Pat it dry with paper towels.

Step 3

In a small bowl, combine minced garlic, rosemary, thyme, olive oil, lemon juice, salt, and pepper to form a thick, aromatic paste.

Place the lamb on a roasting rack in a roasting pan. Using your hands or the back of a spoon, rub the garlic and herb mixture all over the lamb, covering it evenly.
