Ingredients

  • 240 grams Fresh strawberries
  • 50 grams Granulated erythritol
  • 240 ml Heavy whipping cream
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Unflavored gelatin
  • 2 tablespoons Cold water

Directions

Step 1

Wash the strawberries thoroughly, remove the stems, and slice them into small pieces.

Step 2

Place the sliced strawberries and granulated erythritol into a blender or food processor. Blend until smooth to create a strawberry puree.

Step 3

Pour the strawberry puree into a small saucepan and heat over medium-low heat. Cook for 3-5 minutes, stirring occasionally, to intensify the flavor. Remove from heat and allow to cool slightly.

In a small bowl, sprinkle the unflavored gelatin over the cold water and allow it to bloom for 5 minutes. Once bloomed, gently heat it in the microwave for 10-15 seconds or until fully dissolved. Stir the dissolved gelatin into the slightly cooled strawberry puree.
