Ingredients

  • 500 grams Fresh strawberries
  • 50 grams Erythritol (granular or powdered)
  • 1 tablespoon Lemon juice
  • 1.5 tablespoons Chia seeds
  • 1 teaspoon Vanilla extract

Directions

Step 1

Wash the strawberries thoroughly, remove their stems, and cut them into quarters.

Step 2

Add the strawberries to a medium-sized saucepan over medium heat.

Step 3

Stir in the erythritol and lemon juice. Cook for 10 minutes, stirring occasionally, until the strawberries release their natural juices and soften.

Step 4

Use a potato masher or the back of a spoon to mash the strawberries to your desired jam-like consistency. For a smoother texture, you can blend the mixture with an immersion blender.

Step 5

Reduce the heat to low and stir in the chia seeds. Cook for another 5 minutes, allowing the chia seeds to thicken the mixture naturally.
