Ingredients

  • 2 cups Broccoli florets
  • 1 medium Zucchini
  • 1 medium Red bell pepper
  • 1 medium Yellow squash
  • 2 cups Baby spinach
  • 1 cup Mushrooms
  • 2 tablespoons Avocado oil
  • 3 cloves Garlic
  • 2 tablespoons Tamari (gluten-free soy sauce)
  • 1 teaspoon Sesame oil
  • 1 teaspoon Ginger
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Sesame seeds (optional)

Directions

Step 1

Wash and chop the broccoli into small florets, zucchini, yellow squash, and red bell pepper into thin slices or strips.

Step 2

Clean and slice the mushrooms, and mince the garlic and ginger.

Step 3

Heat a large skillet or wok over medium-high heat and add avocado oil.

Step 4

Once the oil is hot, add minced garlic and ginger. Stir-fry for 30 seconds until fragrant.

Step 5

Add broccoli florets and stir-fry for 2 minutes, allowing them to slightly soften but remain crisp.

Step 6

Add zucchini, yellow squash, red bell pepper, and mushrooms to the pan. Stir-fry for 4–5 minutes until the vegetables are tender but still crisp.

Step 7

Add baby spinach and stir for an additional 1 minute, just until it wilts.

Step 8

Reduce the heat to medium and add tamari, sesame oil, salt, and black pepper. Mix well to coat the vegetables evenly in the sauce.
