Ingredients

  • 300 grams water spinach (kangkong)
  • 4 cloves garlic, minced
  • 2 tablespoons coconut oil (or avocado oil)
  • 1 tablespoon soy sauce (gluten-free if needed, or coconut aminos)
  • 1 teaspoon fish sauce
  • 1 teaspoon sesame oil
  • 1 piece red chili, finely sliced (optional)
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper, freshly ground

Directions

Step 1

Wash the water spinach thoroughly under cold running water to remove any dirt or grit. Trim about 2 inches off the tough ends of the stems, and cut the remaining leaves and stems into 3-inch pieces.

Step 2

Heat a large skillet or wok over medium-high heat. Add the coconut oil and let it melt and heat up for about 30 seconds.

Add the minced garlic to the skillet and stir-fry for 30 seconds to 1 minute, or until fragrant, being careful not to let it burn.
