Prepare the keto-friendly noodles according to the package instructions. If using shirataki noodles, rinse them thoroughly under cold water and then boil for 2–3 minutes. Drain and set aside.
Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat.
Add the sliced chicken or beef to the skillet and stir-fry for 5–7 minutes until fully cooked. Remove the meat from the skillet and set aside.
In the same skillet, add the remaining 1 tablespoon of oil.
Add the minced garlic and grated ginger, and stir-fry for 30 seconds until fragrant.
Toss in the sliced bell pepper, julienned zucchini, and mushrooms. Stir-fry for 3–5 minutes until the vegetables are tender but still crisp.
Reduce the heat to medium and return the cooked meat to the skillet. Stir in the noodles.
Pour the soy sauce or coconut aminos and sesame oil over the stir-fry. Add salt and black pepper to taste. Toss everything together until well combined and heated through, about 2 minutes.
Remove the skillet from the heat and garnish with green onions and sesame seeds, if desired.
