Ingredients

  • 1 lb Chicken breast, boneless and skinless
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 2 tbsp Coconut oil
  • 14 oz Shirataki noodles (konjac noodles), rinsed and drained
  • 1 medium Zucchini, julienned or spiralized
  • 1 large Bell pepper, thinly sliced
  • 3 stalks Scallions, sliced
  • 3 cloves Garlic, minced
  • 1 tsp Ginger, grated
  • 3 tbsp Soy sauce or coconut aminos (for gluten-free option)
  • 1 tsp Sesame oil
  • 1 tsp Sriracha or chili garlic sauce (optional, for heat)
  • 1 tbsp Sesame seeds, for garnish
  • 2 tbsp Fresh cilantro, chopped, for garnish

Directions

Step 1

Slice the chicken breast into thin strips and season with salt and black pepper. Set aside.

Step 2

Heat 1 tablespoon of the coconut oil in a large skillet or wok over medium-high heat.

Add the chicken to the pan and stir-fry for 5-7 minutes, or until cooked through and lightly browned. Remove the chicken from the skillet and set aside.

Rinse and drain the shirataki noodles thoroughly according to package instructions. Pat dry with a paper towel.

Add the remaining 1 tablespoon of coconut oil to the skillet. Add the garlic, ginger, and scallions, and cook for 1 minute until fragrant.
