Ingredients

  • 250 g Water spinach (morning glory)
  • 4 cloves Garlic
  • 2 pieces Bird's eye chili
  • 2 tbsp Coconut aminos (or low-sodium soy sauce for low-carb)
  • 1 tbsp Fish sauce
  • 1 tsp Erythritol (or another keto-friendly sweetener)
  • 1 tbsp Oyster sauce (sugar-free, keto-friendly variety)
  • 1 tbsp Avocado oil (or another keto-friendly neutral oil)
  • 2 tbsp Water

Directions

Step 1

Rinse and drain the water spinach (morning glory). Trim the tough stems, leaving the tender stems and leaves. Cut the stems into 2-3 inch sections for easy cooking and eating.

Step 2

Peel the garlic and lightly smash it with the flat side of a knife to release its aroma. Finely chop the bird's eye chili or leave it in thin slices depending on your preferred spice level.

Step 3

Prepare the sauce by mixing coconut aminos, fish sauce, oyster sauce, erythritol, and water in a small bowl. Stir until the sweetener dissolves completely. Set aside.

Step 4

Heat a large wok or skillet over medium-high heat. Add the avocado oil and swirl to coat the surface.

Step 5

Once the oil is hot, add the garlic and chili. Stir-fry for about 30 seconds until fragrant but not burned.

Step 6

Increase the heat to high and quickly add the water spinach to the wok. Stir-fry for about 1-2 minutes until the leaves begin to wilt. Work quickly to prevent overcooking.

Step 7

Pour the prepared sauce over the water spinach. Continue to stir-fry for another 1-2 minutes, ensuring the sauce coats the vegetables evenly.

Step 8

Taste and adjust seasoning if necessary. Remove the wok from the heat as soon as the water spinach is tender-crisp and still vibrant green.

Step 9

Serve immediately as a side dish or light main course. Enjoy your keto-friendly stir-fried morning glory!
