Ingredients

  • 300 grams Fresh spinach
  • 50 grams Almond flour
  • 50 grams Grated Parmesan cheese
  • 2 Large eggs
  • 2 cloves Garlic
  • 2 tablespoons Olive oil
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 0.25 teaspoons Ground nutmeg

Directions

Step 1

Wash the fresh spinach and place it in a large skillet over medium heat. Cook for 2–3 minutes or until wilted, stirring frequently. Once wilted, remove from heat and let it cool.

Step 2

Squeeze out all excess liquid from the spinach using a clean dish towel or your hands. Finely chop the spinach and set aside.

Step 3

In a large mixing bowl, combine the chopped spinach, almond flour, grated Parmesan cheese, eggs, minced garlic, salt, black pepper, and ground nutmeg. Mix well until everything is evenly incorporated.

Step 4

Heat olive oil in a non-stick skillet over medium heat.

Scoop about 2 tablespoons of the mixture and form it into a small patty with your hands. Repeat with the remaining mixture.
