  • 2 cups Almond flour
  • 0.25 cup Coconut flour
  • 1 teaspoon Xanthan gum
  • 1 teaspoon Baking powder
  • 4 ounces Cream cheese
  • 2 cups Mozzarella cheese (shredded)
  • 3 large Eggs
  • 1 cup Spinach (fresh or frozen, chopped)
  • 0.5 cup Feta cheese (crumbled)
  • 2 tablespoons Butter (melted)
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Pepper
  • 0.25 teaspoon Garlic powder
  • 1 Egg wash (1 egg beaten with 1 tablespoon water)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

In a large microwave-safe bowl, melt the mozzarella cheese and cream cheese together in 30-second intervals, stirring in between, until smooth and fully combined.

In a separate bowl, whisk together almond flour, coconut flour, xanthan gum, baking powder, and a pinch of salt.

Combine the dry ingredients with the melted cheese mixture and knead into a dough. Add one egg and continue kneading until a smooth and uniform dough forms.
