Ingredients

  • 1 medium Onion, finely chopped

  • 1 teaspoon Ground coriander
  • 0.5 teaspoon Ground turmeric
  • 0.5 teaspoon Paprika
  • 1 teaspoon Garam masala
  • 300 grams Fresh spinach leaves, washed and chopped
  • 1 cup Coconut milk
  • 1 medium Tomato, finely diced
  • 0.5 cup Vegetable stock or water
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Fresh cilantro, chopped (for garnish)

Directions

Step 1

Heat coconut oil in a large skillet or pan over medium heat.

Step 2

Add the chopped onion and sauté for 3-4 minutes until it becomes soft and translucent.

Stir in the minced garlic and grated ginger, cooking for an additional minute until fragrant.
