  • 1.5 cups Almond flour
  • 1.5 cups Mozzarella cheese (shredded)

  • 2 large Eggs
  • 2 cups Spinach (fresh, chopped)
  • 0.5 cup Ricotta cheese
  • 0.25 cup Parmesan cheese (grated)
  • 2 cloves Minced garlic
  • 1 tablespoon Olive oil
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Ground black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 2

In a microwave-safe bowl, combine the shredded mozzarella cheese and cream cheese. Microwave in 30-second intervals, stirring between, until the mixture is fully melted and combined.

Add almond flour and one egg to the cheese mixture. Mix with a spatula until a dough forms. If the dough is sticky, you can lightly oil your hands to knead it.

Place the dough between two sheets of parchment paper and roll it out into a circle approximately 10 inches in diameter.
