  • 2 cups Almond flour
  • 0.25 cup Coconut flour
  • 2 teaspoons Xanthan gum
  • 10 tablespoons Unsalted butter
  • 1 Egg (large)
  • 2 ounces Cream cheese
  • 3 cups Spinach (fresh or frozen and thawed)
  • 1 cup Feta cheese (crumbled)
  • 2 cloves Garlic (minced)
  • 2 teaspoons Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 Egg wash (1 egg beaten with 1 tablespoon water)

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

Step 2

In a food processor, combine almond flour, coconut flour, and xanthan gum. Pulse to mix thoroughly.

Add cold, cubed unsalted butter to the food processor. Pulse until the mixture resembles coarse crumbs.

Add cream cheese and one egg to the mixture. Process until a smooth dough forms. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes to chill.
