Ingredients

  • 2 cups Mozzarella cheese, shredded
  • 2 ounces Cream cheese
  • 1.5 cups Almond flour
  • 1 teaspoon Baking powder
  • 1 large Egg
  • 1 cup Fresh spinach
  • 0.75 cup Feta cheese, crumbled
  • 1 teaspoon Garlic, minced
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Pepper
  • 1 large Egg yolk, for egg wash
  • 1 teaspoon Water, for egg wash

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 2

In a medium microwave-safe bowl, combine the shredded mozzarella cheese and cream cheese. Microwave on high in 30-second intervals, stirring in between, until the cheeses are melted and form a smooth mixture.

Step 3

In a separate bowl, whisk together the almond flour and baking powder. Add the dry mixture to the melted cheese, followed by the egg, and mix until a dough forms. If the dough is too sticky, you can knead it gently with slightly wet hands.

Step 4

On a clean surface, place the dough between two sheets of parchment paper. Roll it out into a thin rectangle approximately 1/4-inch thick.

In a skillet over medium heat, sauté the minced garlic until fragrant. Add the spinach and cook until wilted. Remove from heat, and mix in the crumbled feta cheese, salt, and pepper.

In a small bowl, whisk together the egg yolk and water to make an egg wash. Brush the tops of the croissants with the egg wash for a golden finish.

Bake in the preheated oven for 20-25 minutes, or until the croissants are golden brown and cooked through.
