Ingredients

  • 2 cups Fresh spinach
  • 2 cups Fresh arugula
  • 1 large Avocado
  • 6 pieces Cherry tomatoes
  • 0.5 large Cucumber
  • 3 tablespoons Extra-virgin olive oil
  • 2 tablespoons Fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoons Garlic powder
  • 0.25 teaspoons Salt
  • 0.25 teaspoons Ground black pepper
  • 0.25 cups Raw pecans or walnuts

Directions

Step 1

Thoroughly wash and dry the spinach and arugula. Place them in a large salad bowl.

Step 2

Halve the avocado, remove the pit, and slice it into thin strips. Gently scoop the slices out of the peel and add them to the bowl.

Slice the cherry tomatoes in half and thinly slice the cucumber. Add both to the salad bowl.
