Ingredients

  • 2 pieces Soft-shell crab
  • 0.5 cups Almond flour
  • 1 large Egg
  • 0.5 cups Pork rind crumbs
  • 1 cup Cauliflower rice
  • 2 tablespoons Cream cheese
  • 1 teaspoon Rice vinegar
  • 4 sheets Seaweed sheets (nori)
  • 1 medium Avocado
  • 0.5 medium Cucumber
  • 2 tablespoons Mayonnaise
  • 1 teaspoon Sriracha
  • 1 cup Coconut oil or avocado oil
  • 2 tablespoons Soy sauce (or coconut aminos for keto)

Directions

Step 1

Prepare the cauliflower sushi rice substitute by microwaving the cauliflower rice for 3-4 minutes until tender. Let it cool slightly and mix in cream cheese and rice vinegar. Chill the mixture in the refrigerator while preparing other ingredients.

Step 2

In a shallow dish, combine almond flour and pork rind crumbs. Beat the egg in a separate bowl.

Step 3

Dip each soft-shell crab into the beaten egg, then coat thoroughly with the almond flour and pork rind mixture.

Step 4

Heat coconut oil or avocado oil in a skillet over medium-high heat. Fry the soft-shell crabs for about 2-3 minutes per side until crispy and golden brown. Remove from the skillet and drain on a paper towel to remove excess oil.
