  • 1 pound Chicken thighs, boneless and skinless
  • 1 medium Yellow onion, diced
  • 4 cloves Garlic cloves, minced
  • 1 large Red bell pepper, diced
  • 1 small Jalapeño, finely chopped (optional for extra heat)
  • 6 cups Chicken broth
  • 1 14-ounce can Canned diced tomatoes, no added sugar
  • 1 teaspoon Ground cumin
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Chili powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 cup Heavy cream
  • 0.25 cup Fresh cilantro, chopped
  • 1 large Avocado, diced (optional for topping)
  • 0.5 cup Shredded cheddar cheese (optional for topping)

Directions

Step 1

Heat olive oil in a large pot or Dutch oven over medium heat.

Step 2

Season the chicken thighs with salt and black pepper, then add them to the pot. Cook for 5-7 minutes until browned on the outside. Remove the chicken from the pot and set aside.

Step 3

In the same pot, add diced onion, minced garlic, red bell pepper, and jalapeño (if using). Sauté for 3-4 minutes until the vegetables are softened.

Pour in the chicken broth and diced tomatoes. Stir to combine and scrape any browned bits off the bottom of the pot.
