Ingredients

  • 250 g Ground beef
  • 300 g Shirataki noodles (miracle noodles)
  • 3 pcs Garlic cloves, minced
  • 1 tbsp Ginger, minced
  • 2 tsp Gochugaru (Korean chili flakes)
  • 1 tbsp Gochujang (Korean chili paste, sugar-free)
  • 2 tbsp Soy sauce (tamari for gluten-free)
  • 4 cups Beef bone broth
  • 1 tbsp Sesame oil
  • 2 pcs Green onions, chopped
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 1 pcs Zucchini, spiralized (optional, for extra texture)
  • 1 pcs Boiled egg, halved (optional)
  • 1 tsp Chili oil (optional, for extra heat)

Directions

Step 1

1. Prepare the shirataki noodles by rinsing them thoroughly under running water for 2-3 minutes to remove their natural odor. Set aside to drain.

Step 2

2. Heat a large pot over medium-high heat. Add the sesame oil, then sauté the minced garlic and ginger for 1-2 minutes until fragrant.

Step 3

3. Add the ground beef to the pot and cook for 5-7 minutes, breaking it apart with a spatula, until browned and cooked through.

Step 4

4. Reduce the heat to medium and stir in the gochugaru and gochujang. Cook for 1 minute to allow the spices to bloom.

Step 5

5. Add the soy sauce and beef bone broth to the pot. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 10 minutes.

Step 6

6. Taste the soup and season with salt and black pepper as needed.

Step 7

7. Meanwhile, in a separate pan, lightly sauté the shirataki noodles for 3-5 minutes over medium heat to improve their texture. If adding spiralized zucchini, sauté it as well for 2-3 minutes.

Step 8

8. Divide the shirataki noodles (and zucchini, if using) between two bowls. Ladle the spicy beef broth over the noodles.

Step 9

9. Garnish with chopped green onions, a halved boiled egg, and a drizzle of chili oil if desired for extra heat.

Step 10

10. Serve immediately and enjoy your keto spicy beef ramyeon!
