Ingredients

  • 200 grams Cauliflower florets
  • 150 grams Zucchini, diced
  • 150 grams Bell peppers (red, green, or yellow), diced
  • 100 grams Spinach leaves, chopped
  • 2 tablespoons Coconut oil (or ghee for non-vegan version)
  • 1 teaspoon Cumin seeds
  • 0.5 teaspoon Turmeric powder
  • 0.5 teaspoon Red chili powder (adjust to taste)
  • 1 teaspoon Coriander powder
  • 0.5 teaspoon Garam masala
  • 1 teaspoon Ginger, minced
  • 1 teaspoon Garlic, minced
  • 1 tablespoon Lemon juice
  • 0.5 teaspoon Salt
  • 2 tablespoons Fresh cilantro, chopped (for garnish)

Directions

Step 1

Wash and prepare all vegetables: cut cauliflower into florets, dice zucchini and bell peppers, and chop spinach leaves.

Step 2

Heat coconut oil in a large skillet or wok over medium heat.

Once the oil is hot, add cumin seeds and sauté until they start to sizzle and release their aroma (about 30 seconds).

Add minced ginger and garlic, and sauté for a minute until fragrant.
