Ingredients

  • 3 tablespoons Unsalted butter
  • 1.5 cups Almond flour
  • 4 ounces Cream cheese
  • 0.25 cup Heavy cream
  • 1 cup Shredded cooked chicken (or ham, minced)
  • 0.25 cup Grated Parmesan cheese
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Ground black pepper
  • 0.125 teaspoon Nutmeg (optional)
  • 2 large Eggs
  • 1 cup Pork rind crumbs (or more almond flour)
  • 1 cup Avocado oil (or olive oil), for frying

Directions

Step 1

In a medium saucepan over medium heat, melt the butter.

Step 2

Add 1/2 cup of the almond flour to the melted butter and whisk for 1-2 minutes until lightly golden and fragrant, creating a roux.

Stir in the cream cheese and heavy cream, whisking until smooth and creamy.

Add the shredded cooked chicken (or ham) to the cream mixture and stir well to combine.

Stir in the grated Parmesan cheese, salt, pepper, and nutmeg (if using). Adjust seasonings to taste.

Remove the mixture from heat and let it cool. Once cooled, refrigerate for at least 1 hour or until firm.
