Ingredients

  • 4 pieces Zucchini (large, for noodles)
  • 2 tablespoons Olive oil
  • 3 cloves Garlic (minced)
  • 1 pound Italian sausage (sugar-free, keto-friendly)
  • 14.5 ounces Canned diced tomatoes (unsweetened)
  • 2 tablespoons Tomato paste (unsweetened)
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.25 cup Parmesan cheese (optional, for garnish)
  • 2 tablespoons Fresh basil (for garnish)

Directions

Step 1

Wash and trim the ends of the zucchinis. Use a spiralizer to create zucchini noodles (zoodles). Pat the zoodles dry with paper towels to remove excess moisture and set them aside.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the sausages and cook, breaking them into small pieces with a spatula, until browned and fully cooked (about 8-10 minutes). Transfer the cooked sausage to a plate and set aside.

Step 3

In the same skillet, reduce the heat to medium and add the remaining 1 tablespoon of olive oil. Add minced garlic and sauté for 30 seconds until fragrant.

Divide the zucchini noodles between four serving plates. Spoon the sausage tomato sauce over the noodles.
