Ingredients

  • 4 medium Zucchini
  • 2 tablespoons Olive oil
  • 1 pound Ground beef (80% lean)
  • 3 cloves Garlic cloves, minced
  • 15 ounces Canned crushed tomatoes (unsweetened)
  • 2 tablespoons Tomato paste
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 0.25 teaspoons Red pepper flakes (optional)
  • 0.25 cups Grated Parmesan cheese (optional, for topping)

Directions

Step 1

Wash the zucchini and cut off the ends. Using a spiralizer, spiralize the zucchini into noodle-like strands. Set aside.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the ground beef and cook until browned, breaking it into small pieces with a spatula. Drain any excess grease and set the beef aside.

In the same skillet, heat the remaining 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
