Ingredients

  • 4 pieces Zucchini (medium-sized)
  • 3 tablespoons Butter (unsalted)
  • 1 cup Heavy whipping cream
  • 2 ounces Cream cheese
  • 1 cup Parmesan cheese (grated)
  • 3 cloves Garlic (minced)
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 tablespoon Olive oil
  • 1 tablespoon Fresh parsley (chopped, optional for garnish)

Directions

Step 1

Use a spiralizer or julienne peeler to create zucchini noodles (zoodles) from the zucchini. Set the zoodles aside and pat them dry with paper towels to remove excess moisture.

Step 2

In a large skillet, heat olive oil over medium heat. Add the zucchini noodles and sauté for 2-3 minutes until slightly softened but still firm (al dente). Remove from the skillet and set aside.
