Ingredients

  • 4 medium zucchini
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter

  • 0.5 cups dry white wine
  • 2 pounds fresh clams (scrubbed and cleaned)
  • 2 tablespoons lemon juice
  • 3 tablespoons fresh parsley (chopped)
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 0.25 cups parmesan cheese (optional, for garnish)

Directions

Step 1

Using a spiralizer or vegetable peeler, create zucchini noodles (zoodles). Place the zoodles on a clean kitchen towel and sprinkle with a pinch of salt to draw out moisture. Set aside for 10 minutes, then pat dry.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the zucchini noodles and sauté for 2-3 minutes until just tender. Remove from the skillet and set aside.
