Ingredients

  • 4 medium Zucchini
  • 1 tablespoon Olive oil
  • 2 cloves Garlic
  • 1 cup Heavy cream
  • 4 ounces Cream cheese
  • 1 cup Cheddar cheese, shredded
  • 0.25 cup Parmesan cheese, grated
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Parsley, chopped (optional)

Directions

Step 1

Wash and trim the ends of the zucchini. Using a spiralizer or julienne peeler, create zucchini noodles ('zoodles'). Pat the zoodles dry with a paper towel to remove excess moisture.

Step 2

Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for 30 seconds until fragrant.

Add the zucchini noodles to the skillet and cook for 2-3 minutes, tossing gently, until slightly softened. Remove the noodles from the skillet and set aside.
