Ingredients

  • 4 medium Zucchini
  • 2 tablespoons Olive oil
  • 4 cloves Garlic
  • 14 ounces Crushed tomatoes (canned, unsweetened)
  • 2 tablespoons Tomato paste (unsweetened)
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 0.25 teaspoons Crushed red pepper flakes
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 0.25 cups Grated Parmesan cheese (optional for garnish)
  • 4 leaves Fresh basil leaves (optional for garnish)

Directions

Step 1

Using a spiralizer, create zucchini noodles from the 4 medium zucchinis. Set aside on a clean paper towel to absorb excess moisture.

Step 2

In a large skillet or saucepan, heat 2 tablespoons of olive oil over medium heat.

Step 3

Mince the 4 garlic cloves and add them to the skillet. Sauté for 1-2 minutes until fragrant, being careful not to burn them.

Step 4

Pour in the 14 ounces of crushed tomatoes and stir in the 2 tablespoons of tomato paste.

Step 5

Add 1 teaspoon of dried oregano, 1 teaspoon of dried basil, 0.25 teaspoons of crushed red pepper flakes, 0.5 teaspoons of salt, and 0.25 teaspoons of black pepper. Stir well.

Step 6

Reduce the heat to low and allow the marinara sauce to simmer for 10-15 minutes, stirring occasionally to thicken and combine the flavors.

Step 7

While the sauce simmers, heat a separate skillet over medium heat. Add the zucchini noodles and sauté for 2-3 minutes until just tender but still firm (al dente). Avoid overcooking to prevent them from becoming mushy.

Step 8

Once the marinara sauce is ready, taste and adjust seasoning if necessary.

Step 9

Serve the zucchini noodles on plates or in bowls, topped with the marinara sauce.

Step 10

Optionally garnish with 0.25 cups of grated Parmesan cheese and fresh basil leaves for extra flavor.
