Ingredients

  • 500 grams Ground beef (80% lean)
  • 4 medium Zucchini (spiralized into noodles)
  • 2 tablespoons Olive oil
  • 1 medium Onion (finely chopped)
  • 3 cloves Garlic (minced)
  • 2 tablespoons Tomato paste
  • 400 grams Canned diced tomatoes (unsweetened)
  • 120 ml Beef broth
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 30 grams Parmesan cheese (optional, for topping)
  • 5 leaves Fresh basil (optional, for garnish)

Directions

Step 1

Heat 1 tablespoon of olive oil in a large skillet over medium heat.

Step 2

Add the ground beef to the skillet and cook until browned, breaking it into small pieces with a spatula. Remove the beef from the skillet and set aside.

Step 3

In the same skillet, add the remaining 1 tablespoon of olive oil. Sauté the onion until translucent, about 3-4 minutes, then add the minced garlic and cook for an additional minute.

Step 4

Stir in the tomato paste and cook for 1-2 minutes to caramelize slightly, enhancing its flavor.

Step 5

Add the canned diced tomatoes, beef broth, browned beef, dried oregano, dried basil, salt, and black pepper. Stir well to combine.

Step 6

Reduce the heat to low and let the sauce simmer for 20 minutes, stirring occasionally, until it thickens and the flavors meld together.

Step 7

While the sauce simmers, prepare the zucchini noodles. You can use a spiralizer to make fresh zucchini noodles or buy pre-spiralized ones.

Step 8

Heat a non-stick skillet over medium-high heat and lightly sauté the zucchini noodles for 2-3 minutes to soften slightly. Avoid overcooking to prevent sogginess.

Step 9

Divide the zucchini noodles among four plates and top with a generous portion of the Bolognese sauce.

Step 10

Optional: Sprinkle with grated Parmesan cheese and garnish with fresh basil leaves before serving.
