Ingredients

  • 2 cups Unsweetened soy milk
  • 0.5 cups Heavy whipping cream
  • 0.25 cups Powdered erythritol (or keto-friendly sweetener of choice)
  • 2 tablespoons Unsweetened cocoa powder (optional for chocolate flavor)
  • 2 teaspoons Unflavored gelatin powder
  • 1 teaspoon Vanilla extract
  • 1 pinch Pinch of salt

Directions

Step 1

In a small bowl, sprinkle the unflavored gelatin over 2 tablespoons of cold soy milk. Let it bloom for about 5 minutes until the mixture thickens.

Step 2

In a saucepan set over medium heat, combine the remaining soy milk, heavy whipping cream, and powdered erythritol. If making chocolate pudding, whisk in unsweetened cocoa powder at this step.

Step 3

Heat the mixture gently, stirring constantly, until it is warm but not boiling. Add the bloomed gelatin and stir until it dissolves completely.

Step 4

Remove the saucepan from heat, and stir in the vanilla extract and a pinch of salt. Taste the mixture and adjust sweetness if needed by adding more erythritol.

Step 5

Pour the mixture into 4 serving containers or ramekins. Allow the pudding to cool slightly at room temperature before covering with plastic wrap.

Step 6

Refrigerate for at least 3 hours or until fully set.

Step 7

Serve chilled and enjoy your creamy Keto Soy Pudding! Optionally garnish with sugar-free whipped cream or a sprinkle of cocoa powder.
