Ingredients

  • 2 tablespoons Tamarind paste
  • 4 cups Water
  • 2 medium Tomatoes, finely chopped
  • 2 Garlic cloves, crushed
  • 1 teaspoon Ginger, finely grated
  • 10 Curry leaves, fresh
  • 2 tablespoons Cilantro, chopped
  • 1 Green chili, slit lengthwise
  • 0.5 teaspoon Ground turmeric
  • 1 teaspoon Black pepper, freshly ground
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Mustard seeds
  • 1 tablespoon Ghee
  • 0.25 teaspoon Red chili powder (optional)
  • 1 teaspoon Salt

Directions

Step 1

In a deep saucepan, combine the tamarind paste and water. Bring the mixture to a boil, then reduce the heat to low.

Step 2

Add the finely chopped tomatoes, crushed garlic, grated ginger, slit green chili, turmeric, black pepper, and red chili powder (if using) to the tamarind-water mixture. Let it simmer for 10 minutes, stirring occasionally.

Step 3

While the mixture simmers, heat ghee in a small tempering pan over medium heat.

Step 4

Add mustard seeds to the hot ghee. Once the seeds start to splutter, add cumin seeds and curry leaves. Stir for about 30 seconds until fragrant.

Step 5

Pour the tempered spices into the simmering soup and add salt. Stir well and let the rasam simmer for another 3-4 minutes.

Step 6

Turn off the heat and add freshly chopped cilantro. Mix well and let the rasam rest for a minute for the flavors to meld.

Serve hot as a soup or as a side dish with keto-friendly accompaniments.
