Ingredients

  • 250 grams Bottle gourd (sorakkai)
  • 50 grams Grated coconut (unsweetened, keto-friendly)
  • 2 pieces Green chilies
  • 1 teaspoon Ginger
  • 1 teaspoon Cumin seeds
  • 1 tablespoon Oil (coconut oil or avocado oil for keto)
  • 0.5 teaspoon Salt
  • 0.25 cup Water
  • 6 leaves Curry leaves
  • 0.5 teaspoon Mustard seeds
  • 1 pinch Asafoetida (hing)

Directions

Step 1

Peel the bottle gourd and chop it into small cubes.

Step 2

Heat 1 teaspoon of oil in a pan over medium heat. Add chopped bottle gourd, green chilies, and ginger, and sauté for 5-6 minutes until the bottle gourd softens.

Step 3

Add cumin seeds to the pan and cook for another minute. Allow the mixture to cool completely.

Step 4

In a blender, combine the sautéed bottle gourd mixture, grated coconut, salt, and water. Blend into a smooth paste. Adjust the consistency by adding more water if necessary.

Step 5

Heat the remaining oil in a small tempering pan. Add mustard seeds and let them pop, then add curry leaves and a pinch of asafoetida. Sauté for 30 seconds.

Step 6

Pour the tempering over the chutney and mix well.

Step 7

Serve the Keto Sorakkai Chutney immediately or store it in the refrigerator for up to 2 days.
