  • 2 medium Tomatoes, diced
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Ground cumin
  • 1 teaspoon Dried thyme
  • 1.5 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 1 cup Cooked shredded chicken (optional for added protein)
  • 2 tablespoons Fresh parsley, chopped (for garnish)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Add the minced garlic and diced onion, and sauté for 3-4 minutes, or until the onion becomes translucent.
