  • 1 cup Green beans
  • 2 pieces Garlic cloves
  • 2 pieces Bird's eye chilies
  • 2 tablespoons Fish sauce
  • 2 tablespoons Lime juice
  • 1 tablespoon Erythritol (or monk fruit sweetener)
  • 2 tablespoons Roasted peanuts (unsalted)
  • 1 tablespoon Fresh cilantro (optional, for garnish)

Directions

Step 1

Peel the green papaya and shred it into thin strips using a julienne peeler or a mandoline slicer. Place the shredded papaya in a large mixing bowl.

Step 2

Chop the green beans into 1-inch pieces. Halve the cherry tomatoes and set them aside.

Step 3

In a mortar and pestle, mash the garlic cloves and bird's eye chilies together until they form a coarse paste.

Step 4

Add the fish sauce, lime juice, and erythritol to the mortar. Mix well to create the dressing.

Step 5

Transfer the dressing from the mortar to the bowl with the shredded papaya. Add the green beans and cherry tomatoes.

Step 6

Toss the ingredients together thoroughly, ensuring the dressing coats all components evenly.

Step 7

Sprinkle the roasted peanuts over the salad and toss gently again.

Step 8

Garnish with fresh cilantro, if desired, and serve immediately. Enjoy your Keto Som Tam as a refreshing side dish or a light main course.
