Ingredients

  • 2 lbs Radishes
  • 2 tbsp Olive oil
  • 3 Garlic cloves, minced
  • 1 Onion, thinly sliced
  • 0.5 cup Heavy cream
  • 0.5 cup Chicken broth
  • 1 cup Cheddar cheese, shredded
  • 2 tbsp Butter
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 2 tbsp Fresh parsley, chopped

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Wash and trim the radishes, then cut them into quarters.

Step 3

In a large skillet over medium heat, add the olive oil. Once hot, add the radishes, season with salt and pepper, and cook until they begin to brown, about 8-10 minutes.

Step 4

Add the sliced onions and minced garlic to the skillet with the radishes. Sauté until the onions are translucent, about 5 minutes.

Pour in the heavy cream and chicken broth, stirring to combine. Bring the mixture to a simmer.

Once simmering, reduce the heat to low and add the butter and half of the shredded cheddar cheese. Stir until the cheese melts and the sauce becomes creamy.

Transfer the radish and sauce mixture into a baking dish and top with the remaining cheddar cheese.

Place the baking dish in the preheated oven and bake until the cheese is bubbly and golden brown, about 20 minutes.
