Ingredients

  • 4 pounds Pork shoulder (or pork butt)
  • 2 tablespoons Olive oil
  • 2 tablespoons Smoked paprika
  • 1 tablespoon Ground cumin
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Erythritol
  • 0.25 cup Apple cider vinegar
  • 6 ounces Sugar-free tomato paste
  • 1 teaspoon Liquid smoke
  • 1 cup Chicken broth

Directions

Step 1

Preheat your oven to 300°F (150°C).

Step 2

In a small bowl, mix together the smoked paprika, ground cumin, garlic powder, onion powder, salt, black pepper, and erythritol.

Rub the olive oil all over the pork shoulder. Evenly coat the pork with the spice mix, making sure to cover all sides.

Place the seasoned pork in a large roasting pan. Pour the apple cider vinegar and chicken broth into the bottom of the pan.
