  • 500 g Pork belly
  • 4 Garlic cloves, minced

  • 1 tbsp Lime juice

  • 0.5 tsp Ground black pepper
  • 2 tbsp Butter
  • 1 Egg, raw
  • 2 tbsp Chopped scallions

Directions

Step 1

Begin by boiling the pork belly in a saucepan with enough water to cover. Simmer for about 25 minutes or until tender.

Step 2

Remove the pork belly from the saucepan and let it cool down. Once cooled, slice the pork into small cubes.

Step 3

Heat a non-stick pan over medium-high heat and add the pork cubes. Fry them until they become golden brown and crispy on all sides. This should take about 8-10 minutes.

In the same pan, add minced garlic and red onion. Sauté until the onion becomes translucent.

Add the chopped bird's eye chili, soy sauce, coconut vinegar, lime juice, salt, and pepper. Mix well with the pork, ensuring the spices coat the meat perfectly.
