Ingredients

  • 1 large Red bell pepper
  • 1 large Yellow bell pepper
  • 1 large Green bell pepper
  • 1 large Red onion
  • 1 medium Zucchini
  • 2 tablespoons Olive oil
  • 1 teaspoon Chili powder
  • 1 teaspoon Cumin
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Paprika
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 small Lime
  • 2 tablespoons Fresh cilantro leaves

Directions

Step 1

Slice the red, yellow, and green bell peppers into thin strips. Peel the red onion and slice it into thin wedges. Cut the zucchini in half lengthwise, then slice into half moons.

Step 2

In a large skillet, heat 2 tablespoons of olive oil over medium-high heat until shimmering.

Step 3

Add the sliced vegetables to the skillet and stir frequently for 7-8 minutes until they begin to soften but retain a slight crispiness.

Step 4

Sprinkle chili powder, cumin, garlic powder, paprika, salt, and black pepper over the vegetables. Stir well to coat them evenly with the spices.

Step 5

Continue to cook for another 5-7 minutes, stirring occasionally, until the vegetables are thoroughly cooked and have a slight charred appearance.

Step 6

Remove the skillet from the heat and immediately squeeze the juice of one lime over the vegetables. Toss to combine.

Step 7

Serve the fajita veggies hot, garnished with freshly chopped cilantro leaves.
