Ingredients

  • 250 g Ground chicken
  • 150 g Shrimp, peeled and deveined
  • 1 large Egg
  • 2 tablespoons Green onion, finely chopped
  • 2 cloves Garlic, minced
  • 1 teaspoon Sesame oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 12 leaves Cabbage leaves
  • 100 g Peanuts, roasted and unsalted
  • 200 ml Coconut milk
  • 1 tablespoon Soy sauce
  • 1 tablespoon Lime juice
  • 1 teaspoon Chili paste

Directions

Step 1

In a food processor, pulse the shrimp until it forms a paste.

Step 2

In a large mixing bowl, combine the ground chicken, shrimp paste, egg, green onion, minced garlic, sesame oil, salt, and black pepper. Mix thoroughly until all ingredients are well combined.

Step 3

To prepare the cabbage leaves, blanch them in boiling water for 1-2 minutes until just softened. Remove and immediately place them in an ice bath to stop cooking. Drain and pat dry with paper towels.

Step 4

Place about 1-2 tablespoons of the chicken and shrimp filling onto each cabbage leaf.

Fold the sides of the leaf over the filling and roll it up tightly, like a burrito. Secure with toothpicks if necessary.

Set a steamer over boiling water. Place the cabbage rolls in the steamer, cover, and steam for about 15 minutes or until the filling is cooked through.

Meanwhile, prepare the peanut sauce. In a blender or food processor, combine the roasted peanuts, coconut milk, soy sauce, lime juice, and chili paste. Blend until smooth and creamy.
