  • 8 cups water
  • 2 tablespoons tamarind paste
  • 3 tablespoons fish sauce
  • 1 medium radish, sliced
  • 2 small eggplant, cubed
  • 12 pieces okra, sliced
  • 1 bunch bok choy
  • 2 large tomatoes, quartered
  • 1 medium onion, quartered
  • 1 or to taste serrano peppers, whole
  • to taste salt
  • to taste black pepper

Directions

Step 1

Begin by cutting the pork belly into bite-sized pieces.

Step 2

In a large pot, combine the pork belly and water. Bring to a boil and then simmer for 30 minutes, skimming off any scum that rises to the top.

Add the tomatoes, onion, and tamarind paste to the pot. Continue to simmer for another 20 minutes until the pork is tender.

Stir in the fish sauce, sliced radish, cubed eggplant, sliced okra, and whole serrano pepper. Cook for an additional 15 minutes.
