Preheat your oven to 325°F (165°C).
In a saucepan over medium heat, combine the heavy cream and cocoa powder. Whisk continuously until the mixture is smooth and starts to simmer. Be careful not to let it come to a boil.
In a separate bowl, mix the granular erythritol, egg yolks, vanilla extract, and salt. Whisk until smooth and well combined.
Once the cream mixture has simmered, slowly pour about a third of it into the egg mixture, whisking continuously to temper the yolks and prevent them from cooking.
Return the tempered egg mixture back into the saucepan with the remaining cream mixture, whisking constantly.
Reduce the heat to low and continue to cook the custard, stirring frequently, for about 5-7 minutes until the mixture thickens and coats the back of a spoon.
Remove the saucepan from heat and add the chopped unsweetened chocolate. Stir until the chocolate is fully melted and the custard is smooth.
Pour the custard mixture into four individual ramekins.
Place the ramekins in a large baking dish. Fill the dish with hot water until it reaches halfway up the sides of the ramekins, creating a water bath.
Carefully transfer the baking dish to the preheated oven and bake for 25-30 minutes, or until the custards are set with a slight jiggle in the center.
Remove the ramekins from the water bath and let them cool to room temperature, then refrigerate for at least 2 hours to allow the custard to set completely.
Serve chilled and enjoy your keto-friendly silky chocolate custard!
