Ingredients

  • 2 cups Heavy cream
  • 0.5 cup Unsweetened cocoa powder
  • 0.5 cup Granular erythritol sweetener
  • 4 units Large egg yolks
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Salt
  • 2 ounces Unsweetened chocolate, chopped

Directions

Step 1

Preheat your oven to 325°F (165°C).

Step 2

In a saucepan over medium heat, combine the heavy cream and cocoa powder. Whisk continuously until the mixture is smooth and starts to simmer. Be careful not to let it come to a boil.

In a separate bowl, mix the granular erythritol, egg yolks, vanilla extract, and salt. Whisk until smooth and well combined.

Once the cream mixture has simmered, slowly pour about a third of it into the egg mixture, whisking continuously to temper the yolks and prevent them from cooking.
