Ingredients

  • 500 grams ground pork
  • 200 grams shrimp, peeled, deveined, and chopped
  • 100 grams unsalted pork rind crumbs
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon ginger, freshly grated
  • 2 cloves garlic, minced
  • 2 tablespoons scallions, finely chopped
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 50 grams konjac flour
  • 100 milliliters water

Directions

Step 1

In a large mixing bowl, combine the ground pork, chopped shrimp, unsalted pork rind crumbs, soy sauce, sesame oil, ginger, garlic, scallions, salt, and black pepper. Mix thoroughly until all ingredients are well combined.

Step 2

To prepare the keto dumpling wrappers, in a separate bowl, mix the konjac flour with water. Stir until a sticky dough forms, adding more water if necessary to achieve a workable consistency.

Step 3

Divide the dough into small portions, approximately the size of a walnut. Roll each portion into a ball and flatten it into a thin circle using a rolling pin or your palms.

Step 4

Take a flattened piece of dough and place about 1 tablespoon of the pork and shrimp mixture in the center.

Step 5

Gather the edges of the wrapper around the filling and pinch together above the filling to form a little 'waist', leaving the top open.

Step 6

Repeat this process with the remaining dough and filling.

Step 7

Prepare a steamer and line it with parchment paper or cabbage leaves to prevent sticking. Arrange the wrapped dumplings in the steamer, ensuring they are not touching each other.

Step 8

Steam the dumplings over boiling water for about 12-15 minutes or until fully cooked. The pork should be slightly firm and the shrimp pink and opaque.

Step 9

Serve hot with your favorite keto-friendly dipping sauce.
