  • 0.5 head Green cabbage
  • 0.5 head Red cabbage
  • 1 medium Carrot
  • 3 stalks Green onions
  • 0.5 cup Fresh cilantro
  • 0.25 cup Peeled almonds
  • 2 tablespoons Sesame seeds
  • 0.25 cup Olive oil
  • 2 tablespoons Apple cider vinegar
  • 1 tablespoon Lemon juice
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Start by preparing the vegetables. Slice both the green and red cabbage halves into thin shreds using a sharp knife or a mandoline slicer. Ensure you have approximately 4 cups of shredded cabbage in total.

Step 2

Peel the carrot and either grate it using a box grater or julienne it using a julienne peeler. Add to the cabbage.

Finely chop the green onions and roughly chop the fresh cilantro. Add these to the cabbage and carrot mixture.

For some added crunch, coarsely chop or roughly crush the peeled almonds. Toast these in a dry skillet over medium heat for about 3-5 minutes, stirring frequently, until they are golden and fragrant. Let them cool slightly and then toss them into the salad.
