Ingredients

  • 150 g Sesame seeds
  • 100 g Almonds
  • 50 g Unsweetened shredded coconut
  • 120 ml Sugar-free syrup
  • 60 g Coconut oil
  • 1 tsp Vanilla extract
  • 0.25 tsp Salt

Directions

Step 1

Preheat your oven to 180°C (350°F). Line a 9x9 inch (23x23 cm) baking pan with parchment paper, allowing the paper to extend over the sides for easy removal later.

Step 2

In a large mixing bowl, combine the sesame seeds, almonds, and unsweetened shredded coconut. Stir well to ensure they are evenly mixed.

Step 3

In a small pan over low heat, melt the coconut oil. Once melted, remove the pan from the heat and stir in the sugar-free syrup, vanilla extract, and salt. Mix until the ingredients are well combined.

Step 4

Pour the liquid mixture over the dry ingredients in the large mixing bowl. Stir the ingredients together until everything is thoroughly coated and combined.

Step 5

Transfer the mixture to the prepared baking pan. Use a spatula or the back of a spoon to press it firmly and evenly into the pan.

Step 6

Place the pan in the preheated oven and bake for 12-15 minutes, or until the edges become golden brown.

Step 7

Remove the pan from the oven and allow it to cool completely in the pan on a wire rack. This will help the bars firm up as they cool.

Step 8

Once cooled, carefully lift the whole block out using the parchment paper and place it on a cutting board. Use a sharp knife to cut into 12 bars.

Store the bars in an airtight container at room temperature for up to a week or in the fridge for a longer shelf life.
