  • 4 pounds Pork shoulder or pork butt
  • 2 tablespoons Olive oil
  • 4 cloves Garlic cloves, minced
  • 2 teaspoons Kosher salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Caraway seeds
  • 2 teaspoons Paprika
  • 1 large Onion, chopped
  • 2 stalks Celery stalks, chopped
  • 1 large Carrot, chopped
  • 2 pieces Bay leaves
  • 2 cups Chicken or beef broth
  • 2 tablespoons Apple cider vinegar
  • 1 teaspoon Fresh thyme, chopped

Directions

Step 1

Preheat your oven to 325°F (162°C).

Step 2

In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.

In a small bowl, mix together the kosher salt, black pepper, caraway seeds, and paprika. Rub this spice mixture all over the pork shoulder.
